MP’s Famous Muffins

This recipe is courtesy of my 2nd mom, and CB’s actual mother. She is famous in the family for her healthy bran muffins and I love them so much that I decided to share them with all of you! They are packed full of great ingredients including oats, flax seeds and fiber! They are a healthy alternative for breakfast in the morning and they go great with your morning cup of coffee! (which both MP and myself cannot live without.) Enjoy!

What you’ll need:

½ cup brown sugar

1 ½  cups oat bran cereal

1 ½  cups unbleached white flour

1 ½  teaspoons baking powder

1 ½  teaspoons baking soda

½ teaspoon salt

¼- ½ cup flax seeds

4 egg whites

1 cup unsweetened applesauce, chilled

4 tablespoons vegetable oil

½ cup- 1 cup chopped nuts (pecans or walnuts work well. You can also omit this ingredient if you prefer)

Directions:

Preheat oven to 375 degrees. Line muffin tins with paper baking cups.

Mix together dry ingredients. Add eggs, applesauce and oil. Mix well until combined. Fold in nuts with a spatula. (Batter will be denser than your typical muffin batter)

Spoon batter into muffin cups and let stand about 10 minutes.

Bake about 15-17 minutes until golden.
