B’s Birthday

“Beer Cake”

As we know, I am a baker. I love all things sweet! B on the other hand, would pick a steak anyday over one of my (beautiful and tasty) cakes. So, in honor of his birthday I made him the beer cake. After years of baking him various cookies and cakes, I think I finally nailed it!

What you will need:

  1. 30 or 24 pack beer
  2. Cake Rounds (8”, 10” and 12” worked well. You can find these in the cake decorating section of your craft store)
  3. Ribbon for decoration

Instructions:

Stack the beer cans onto the cake rounds, starting with the largest cake round at the bottom.

Keep making tiers until you like the way your cake looks.

Mine used about 11 cans on the bottom, 9 cans in the middle and 4 cans on the top.

Cut the ribbon and tie it around each tier. (I just taped the ribbon to secure it).

Add curly gift bows to the top for a cake topper.

Not only is this cake practical for the non-sweets eaters, but it also serves as a great centerpiece!

MP’s Famous Muffins

This recipe is courtesy of my 2nd mom, and CB’s actual mother. She is famous in the family for her healthy bran muffins and I love them so much that I decided to share them with all of you! They are packed full of great ingredients including oats, flax seeds and fiber! They are a healthy alternative for breakfast in the morning and they go great with your morning cup of coffee! (which both MP and myself cannot live without.) Enjoy!

What you’ll need:

½ cup brown sugar

1 ½  cups oat bran cereal

1 ½  cups unbleached white flour

1 ½  teaspoons baking powder

1 ½  teaspoons baking soda

½ teaspoon salt

¼- ½ cup flax seeds

4 egg whites

1 cup unsweetened applesauce, chilled

4 tablespoons vegetable oil

½ cup- 1 cup chopped nuts (pecans or walnuts work well. You can also omit this ingredient if you prefer)

Directions:

Preheat oven to 375 degrees. Line muffin tins with paper baking cups.

Mix together dry ingredients. Add eggs, applesauce and oil. Mix well until combined. Fold in nuts with a spatula. (Batter will be denser than your typical muffin batter)

Spoon batter into muffin cups and let stand about 10 minutes.

Bake about 15-17 minutes until golden.

Need a gift for your local holiday tacky sweater party?

With the upcoming holidays, we all get to dust off our tacky sweaters and crash holiday parties!  Anything goes at these holiday events, just make sure you bring a little something for the hostess.  This is by far my favorite hostess gift. It’s super simple to make and everyone loves it. I have so much fun picking out the coordinating towels and napkins. There are several variations, so be as creative as you like…but most importantly once they open the gift you can open the bottle!
What you’ll need: 

Bottle of wine (enjoy!), 1 tea towel, 1 pack cocktail napkins, ribbon, 1 tacky holiday sweater, & a rubber band

Directions:

1. Spread out the tea towel and set the wine bottle in the middle

2. Pick up the sides of the towel and gather around the bottleneck, secure with a rubber band.

3. Place cocktail napkins on the front of the wine bottle and secure with ribbon.

Voila! The quickest and cutest holiday gift!
